What You Need:

2 eggs
1 pancake mix
2 tablespoons cooking oil
1/2 cup water

What To Do:

  1. Separate egg yolks from egg whites.
  2. Combine water, egg yolks, and cooking oil in a bowl. Beat together.
  3. Gradually add pancake mix into the mixture.
  4. In a separate bowl, briskly beat white eggs with an electric mixer until stiff peaks form as though you’re making meringue.
  5. Fold in the meringue gradually into the pancake batter with a spatula.
  6. Prepare your pan and wipe over a small amount of cooking oil in the pan with a paper kitchen towel.
  7. Once hot enough, spoon in the batter and shape into your desired size.
  8. To bring moisture into the pan, add a small amount of water on the sides of the pancakes and cover the pan. When the bottom of the pancakes looks golden brown, carefully flip each piece. Again, put a small amount of water on the sides to induce moisture and cover the pan.
  9. Check the bottom of the pancakes. If they’re golden brown, take them out from the heat.
  10. Serve with fruit or ice cream on the side.
