Each type of sugar has a distinct taste and colour which compliments and brings out the flavour. For instance, rock sugar is used in White Fungus Bird's Nest, giving it a clear and colourless sugar syrup whereas brown sugar is used in Sweet Potato Dessert for the intense flavour and aroma.
